With two young kids and a husband who often works late, I love 15-minute meals that I can get on the table quickly. I love salads, but they need to have substance to them if we’re going to make them into a meal. This Turkey Tex-Mex Salad is one of my new favorites! It’s cheesy, spicy, crunchy, gooey goodness. The best part? It is so easy.
Jennie-O Ground Turkey is the main event of this meal. Cook over medium-high heat until browned. While it is cooking, you can prepare your other ingredients: black beans, shredded cheese, grape tomatoes, a jar of salsa and lettuce.
When the turkey is browned, reduce heat to low and add all ingredients except the lettuce.
Stir over low heat until cheese is melted.
Serve over lettuce and enjoy! I loved that it was hearty enough to fill us up while providing our leafy greens in something other than a side salad. Even my kids, who refuse nearly everything but crackers and cookies, gave this Turkey Tex-Mex Salad a try! What is your favorite 15-minute meal?
- 1 lb Jennie-O Ground Turkey
- 1-15 oz jar salsa
- 1 can black beans, drained
- 1 cup grape tomatoes
- 2 cups colby jack or cheddar cheese, shredded
- 1 head lettuce
- Cook ground turkey over medium-high heat until browned.
- Reduce heat to low.
- Stir in salsa, black beans, grape tomatoes and cheese.
- Cook until cheese is melted.
- Serve over lettuce.
