It’s A Casserole Kind of Week

Come over for dinner any night this week and you’ll probably find us having some type of casserole.  That’s kind of weird, too, because I rarely make casseroles.  There’s something about popping a bunch of ingredients all in one dish that has been very appealing this week.

On Sunday night, I tried out this Hurry Up Chicken Pot Pie recipe from Paula Deen.  It was delicious, but I think she was trying to kill us with all of that butter.  This recipe doesn’t need any butter, much less a whole stick of it!  If you like pot pie, I would recommend this recipe though (minus all of that artery-clogging action).

Tater tot/zucchini casserole was on tap last night.  In an attempt to use up a bunch of random things we have laying around, I threw sliced zucchini, ground beef, cream of mushroom soup, some tater tots and cheese into a dish.  It turned out to be quite good.  I’d typically skip the tater tots, but we still some of those in the freezer from an old pregnancy craving.  ;)

Fire Alarms Galore!

There are numerous benefits to living on-campus for Hubster’s position as a Hall Director, but there are moments (or nights) when those seem to be outweighed by the negative experiences. Tonight was one of those nights.

Less than two hours after C went to bed, the fire alarm went off. Now, this is not just your typical fire detector. Imagine an air horn siren and flashing strobe lights with a male voice saying, “ATTENTION, ATTENTION. PLEASE MOVE TO YOUR NEAREST EXIT. ATTENTION, ATTENTION.” It is truly terrifying to wake up to that. My poor son woke up to that noise FOUR times tonight. FOUR!

For the first alarm, we spent maybe 15 minutes outside. Less than 30 minutes after we came back inside…just when I got C to fall back asleep…it went off again. We spent significantly more time outside for that one. When we came back in, the strobe lights continued to flash for about 45 minutes. In the amount of time it took me to breathe a sigh of relief when the lights went off, the alarm sounded for a third time. Off we went…this time, we didn’t need to exit the building because it went off during repair. Go back to the apartment…get C to fall asleep…prepare myself for bed…and guess what? Yes, the alarm goes off AGAIN.

This time, C and I waited out at the front desk until the electrician and security left the building. Hopefully that means the rest of our night will be quiet.

As for Hubster, he’s lucky enough to be on duty tonight (sarcasm intended). He’s pretty much having the worst duty night he’s had since last spring, so he’ll probably end up pulling an all-nighter. Poor guy.

Here’s to hoping the rest of our night is alarm-free!

And Now, It’s Time For Brownies

It’s been quite a day.  Quite.  A.  Day.

In addition to his cold, C was having a bad teething day today.  I don’t understand why I’m so tired, because we didn’t even leave home today.  I think it’s emotional exhaustion and frustration.  When C wasn’t whining, he was screaming.  The only time that he was quiet was when I went against one of my fundamental parenting philosophies – we cuddled up in the bed and watched television.  Don’t judge me!  A mother needs a little silence!  It’s not like I can just leave the room to get some peace when we live in a one-bedroom apartment.  Maybe it’s okay to do that if the alternative is losing your mind?  *sigh*

So now that C is in bed for the night, I have some brownies in the oven.  This will relieve my stress in two ways:

1. Baking relaxes me.
2. Chocolate!  Need I say more? ;)
