Fresh, seasonal produce is quite possibly my favorite thing about summer. So much of family life centers around food. Parties, cookouts, picnics, grilling. Pick ‘n Save is my favorite Wisconsin grocery, because I know they will always have fresh, local produce in stock. My kids like it because of the awesome shopping carts! I always spend an inordinate amount of time in the produce section. There are so many beautiful fruits and vegetables to look at! This week, I picked out a cantaloupe to make a delicious seasonal recipe: melon salsa.
I used to be intimidated by picking out the perfect melon, but it doesn’t need to be scary! Find one that is free of bruises, cracks or soft spots. It should feel heavy for its size. The area where the vine was attached should be slightly soft and have a fresh, sweet smell.
I love this recipe, because it is so easy to make! The fruit and vegetables can be quickly chopped and assembled: cantaloupe, cucumber, jalapeño, half of a red onion, cilantro and half of a lime.
Chop and pile your ingredients into a bowl. I chose a glass bowl so I could show off this pretty salsa for my family!
Put in a splash of olive oil and squeeze half of a lime over the top, toss, and you’re done! Pop it in the refrigerator and enjoy some time outdoors with your family while grilling the chicken. C and Baby Jo love to spend time outside. They take turns pushing each other around on various toys. They could entertain each other like that for hours!
When the chicken is finished, top it with a heaping spoonful of melon salsa and serve. It would also be great on top of grilled fish from #MyPicknSave.
What would you pair with melon salsa?
