Time seems to pass a little slower on summer nights. I enjoy the more relaxed feel, the longer hours of daylight. I want to hold onto that feeling. We spend as much time outdoors as we can, playing with the kids, getting our hands dirty in the garden, grilling and eating outside. If I can spend less time in the kitchen on any given summer night, I call it a win. We added grilled fruit skewers to our menu this week for an easy summer dessert. They were simple, healthy and delicious.
I was in the mood to make things as simple as possible, so we purchased fresh, prepared pineapple, strawberries and cantaloupe at Festival Foods. We also selected Festy Burgers (bacon and cheddar!) and Pork Kebabs. I prepared asparagus with some olive oil, roasted garlic, salt and pepper and put it in foil to steam on the grill. Fresh meat, veggies, and fruit – what more could one ask for?
Hubster put the fruit skewers on the top grilling rack. He turned them after five minutes on medium heat. After five minutes on each side, they were ready. I served them with a side of vanilla Greek yogurt. An easy summer dessert and the perfect sweet treat!
We spent the rest of the night enjoying our backyard. Ever since C received his truck, his desire has been to help us with yard work by driving items around the yard. He and Jo lined up their garden tools, took a drive, and got to work. These two seem to grow so quickly. Someone once told me that the days are long, but the years are short. I often meditate on that truth. It’s easy to get caught up in the daily stresses of life, but time really does pass quickly. I want to take every opportunity to soak in the moments that we have together.
