At a local moms group last week, several women brought in Instant Pots and we spent the morning chatting about recipes and hacks for making our lives easier. It was funny to hear how many of us use it to help simplify our daily lives! I love that the Instant Pot seals completely to make traveling easier. As the holidays approach, here’s a little life hack for you: throw your ingredients into your Instant Pot, cook, and then take the whole thing with you to a holiday party! This Instant Pot Bacon Pepper Jack Cauliflower Mash, featuring Crystal Farms® Cheese, is a cheesy vegetable side dish.

Here are the ingredients you will need for this Instant Pot side dish (if you’re serving a crowd, double or triple this recipe!):
1 head of cauliflower, chopped
6 slices of bacon, cooked and chopped
1 cup Crystal Farms® pepper jack cheese, cubed
1/2 cup Crystal Farms® sharp cheddar cheese, cubed
1/4 cup Crystal Farms® cream cheese, cubed
1/2 tsp minced garlic
1/4 cup chicken broth
Spray your Instant Pot generously with nonstick spray. Dump in your cauliflower, cheese and garlic. Pour the chicken broth on top. Cover and seal your Instant Pot and put it on the manual setting for 15 minutes.
Once it’s done, release the pressure, uncover and stir and mash with a slotted spoon. It’s ready to serve!

- 1 cup pepper jack cheese, cubed
- ½ cup sharp cheddar cheese, cubed
- ¼ cup cream cheese, cubed
- ½ tsp minced garlic
- ¼ cup chicken broth
- Generously spray Instant Pot with nonstick cooking spray.
- Add chopped cauliflower, chopped bacon, cubed cheeses, and minced garlic.
- Pour chicken broth over the top of your ingredients.
- Seal Instant Pot and cook on manual for 15 minutes.
- Release pressure.
- Mash with slotted spoon and serve.
