I look forward to this season every year. Beautiful leaves, crisp autumn air and comfort food. Soup and comfort food are synonymous in our household. There’s nothing like the warm comfort of flavors that have been brewing for hours. Our slow cooker gets a workout this time of year! I can throw all the ingredients in one pot, enjoy the outdoors with my family, and come back to a finished meal hours later. Stop by the produce section and stock up on potatoes. Yukon Gold potatoes are my first choice for this recipe. They have just the right starch content! While you’re there, grab carrots, garlic and an onion as well. You’ll easily find the rest of the ingredients throughout the store. #MyPicknSave does a great job of making their stores easy to navigate.
Chop your potatoes, onion, garlic and carrots and add them to your slow cooker. I only used half of that ginormous onion! Add 1/2 stick of butter. Pour the chicken broth over the top.
Cook on low for six hours. You are now free to go about your day! We’ve been spending a lot of time at the park. I want to get the kids outside as much as possible before the cold Midwestern winter settles in.
Go, play, run!
One hour before dinner time, add your bacon, sour cream and shredded cheddar cheese to the slow cooker. I purchase pre-cooked bacon to keep this recipe to one pot. If you have the time to clean a second pan, you can choose to cook your own and add a little grease to the slow cooker!
You may also choose to mash the ingredients with a potato masher a few times to create a different texture. What I like most about this recipe is that you can “choose your own adventure!”
- 4 cups chicken broth
- 8 Yukon Gold potatoes
- 3 carrots
- 3-4 cloves garlic
- 1 onion
- ½ stick butter
- 6 strips of bacon
- 1-8 ounce container sour cream
- 1-8 ounce package shredded cheddar cheese
- Chop potatoes, onion, garlic, carrots and add to slow cooker.
- Add ½ stick butter to slow cooker.
- Add chicken broth to slow cooker.
- Cook on LOW for 6 hours.
- Chop bacon.
- Add bacon, sour cream and cheddar cheese to slow cooker.
- Cook on LOW for 1 hour.
