Roasting food in my oven intimidated me. It wasn’t until a few years ago that I finally tried roasted vegetables. Why on earth did I wait so long?! Roasted veggies are now one of my favorite foods. They are versatile enough that you can experiment with different spices and seasonings without completely ruining the flavor. For a cook that likes to try new things and doesn’t like to measure spices, it’s a match made in heaven. My latest obsession is adding turmeric to my recipes, and these Turmeric Roasted Root Vegetables are a delicious side dish.

Here is what you will need to create Turmeric Roasted Root Vegetables for your next meal:
1 bag Simply Potatoes® Diced Potatoes
1 lb rainbow carrots
1/4 cup grapeseed oil
1.5 Tbsps turmeric
1 Tbsp roasted garlic
dash of salt and pepper
While you preheat the oven to 425 degrees, you can prepare your rainbow carrots.
Wash, peel and chop before tossing them into a baking sheet.
Then, add the Simply Potatoes to your pan before drizzling grapeseed oil and adding your spices. I love the smell of turmeric and roasted garlic!
Toss to coat root vegetables with turmeric and garlic. Roast at 425 degrees for 20 minutes. Veggies will be crunchy on the outside and soft on the inside. The rainbow carrots have a sweet flavor. Yum.
